LEWIS/TEIN: THE EMPIRE STRIKES BACK. (cue Darth Vader music):
We're not sure what it means, but apparently it is good news for embattled lawyers Lewis and Tein and their contretemps with the Miccosukee Tribe. South Florida Lawyers has the details here.
It's a civil matter (read: mess) so it probably has something to do with a debentured bond and a summary judgment/offer of estoppel/interrogatory response something or other. Defenders of Messrs. Lewis and Tein have repeatedly and loudly said all was not it appeared to be (and as recounted by Judge Dresnick) and they may be right.
(If anybody can find a free clip of Tom Hagen in Godfather II yelling "The committee owes my client an apology" during the senate investigation of Michael Corleone, we would be much obliged.)
Very quietly, long time Dade Corrections Officer Ben Moreno retired. Ben was the consummate corrections officer. Respected by clients, judges, prosecutors, and defense attorneys, Ben was the type of civil servant who made this community a better place to live. Many PDs or young defense attorneys got a boost in trial when their client would tell them that "Officer Moreno said you're doing a good job." Ben Moreno was the C/O who took the infamous Joyce Cohen into custody right after the jury returned a guilty verdict and the judge revoked her million dollar bond.
From the biggest cases to the smallest ones, Corrections Officer Ben Moreno was a steady influence in the REGJB for thirty years. He will be missed, but he has earned his retirement.
Well Done Officer Moreno; Well Done Indeed!
DOM: He doesn't just win massive federal drug conspiracy cases (as he did last week when he convinced the Feds to drop the case in the face of catching the CI in many many lies.)
He also gets PTI for famous clients before Judge Newman.
DOM: He's everywhere you need him to be.
Judge Ed Newman was delighted to see David Markus and his client Matthew Newton last week.
Although DOM and his client seem to be facing different adversaries in court, things turned out well as a PTI resolution sent all parties happily on their way.

special Ed is by far the worst county court judge to be in front of. Granted I'm only in county court once a month, it's a brutal experience in front of him. Is anyone ever going to run against this dinosaur?

ReplyDeleteI Say No to Brine. Those of use w/ hypertension dont need any extra sodiun in what is a salt ladened meal.
ReplyDeleteAlso I dont think it adds anything extra. Injection of broth and butter is better. You can get ainjector in the food gadget section of W/D or Publix, and likely Sedanos or Presidente
Dry Salt Brine with herbs 24 hours. Rinse extremely well after. Let air dry for 24-48 hours in fridge before cooking. Ice the breasts 20-30 minutes before cooking (we all love to ice the breasts!)

Im sorry DS. You are wrong. Yes to brine. Its the only way to insure bird doesnt dry out. Then you pour mojo all over it and cover it in bacon. Goal: try to make the bland dry thing taste like lechon!

Brine. I thought deepfired turkey was the best tasting until i had it on the same plate next to a brined turkey. Blows it away. As for the sodium content, one could argue you need less gravy and no table salt with brine so theres not much net difference. Also have a second slice of pumpkin pie. Ive heard pumpkin is a vegetable and very healthy.

ReplyDeleteDefinitely brine. Brine provides for a much more even result and the turkey will turn out much juicier and tastier, especially if a good brine recipe is used.
ReplyDeleteAmount of increased sodium is negligible and don't know why broth and butter (salt and fat) would really be any healthier.
Injecting is used to add flavor but if it's not done right someone gets a piece that's 'over-flavored' while the rest of the bird is too dry.

ReplyDeleteevery bird I've brined has been ruined- way too salty. So I did a test run this weekend with a chicken- cut the salt in half- half a cup of salt to a gallon of water- and soaked 6 hours. Was still too salty.
What is the ratio and time periods that people have used that have worked?

The Port Authority says the person was removed from the plane after making a remark to another passenger that was perceived as a threat. The person was in custody.

Just make absolutely sure to completely dry the outside of turkey before lowering into the oil.
ReplyDeleteRecipe I've used for 15 lb turkey that is brined and then deep fried: Comes out really good. (courtesy of alton brown)
6 quarts hot water
1 pound kosher salt
1 pound dark brown sugar
5 pounds ice
Place the hot water, kosher salt and brown sugar into a 5-gallon upright drink cooler and stir until the salt and sugar dissolve completely. Add the ice and stir until the mixture is cool. Gently lower the turkey into the container. If necessary, weigh down the bird to ensure that it is fully immersed in the brine. Cover and set in a cool dry place for 8 to 16 hours.
Remove the turkey from the brine, rinse and pat dry. Allow to sit at room temperature for at least 30 minutes prior to cooking.
Its almost 4pm, its a short week, its monday and not a damn thing is going on. Shumie time.

The fellow was in misdemeanor court getting PTI, and by the look on his face, I'm certain he was embarrassed about being in court that day.
I wouldn't like it if you did that to one of my clients. Just because you can do something, doesn't mean you should.
Fair enough. And in other circumstances you would be correct. BUT, without revealing sources and methods, this individual is apparently famous and his courtroom experience was EXTENSIVELY covered in the media, albeit on the other side of the pond.

8 to 10 hour shifts, 5 DAYS A WEEK, for years at night, all Summers and holidays.
Ranch House and HoJos in Undergrad.
I worked at the Staek & Ale in what is now Aventura ( Miami Gardens Dr. & Biscayne) at night in Law School.
I was Senior Night Cook at that Steak & Ale, which was one of the TEN busiest Steak & Ale's in the country.
I can make/cook :
Steak, Prime Rib, Chicken, Fish, Lobster. Crabs, Burgers, BBQ, Casarols,Veggys, Sandwiches, Soups, all kind of Fryed stuff, Breakfast, Etc.
I have cooked, plated and served Tens of Thousands of meals ( Likely 45-50,000), with less than 50 returned.
I admit Deserts & Pastry are my weakness.
